Executive Chef | Red 8
Chef Richard Chen brings extensive experience in Cantonese cuisine to his role as executive chef at Red 8. Blending the flavors of China with Western techniques, he oversees Red 8’s menu drawing inspiration from Shanghai and Sichuan.
A graduate of the Culinary Institute of America in Hyde Park, New York, Chef Richard’s resume includes some of the most esteemed restaurants and hotels in the country. He launched his career in Chicago where he quickly began earning accolades, starting with his time at the Ritz Carlton of Chicago, which earned both Mobil Five Star and AAA Five Diamond awards. He then moved to Peninsula Chicago, a five-star hotel, where he and his team earned two AAA diamond awards, two Mobil Star awards and the title of one of the “Best New Restaurants” in Chicago by Chicago Magazine.
Shortly after, Chef Richard joined the Wynn Resorts family to help open the only Michelin-rated Cantonese restaurant in the United States, Wing Lei at Wynn Las Vegas. The beloved venue went on to earn Michelin stars in both 2008 and 2009 in addition to a collection of Mobil and AAA Diamond five- and four-star awards. Most recently he spent time at Michi in Austin, Texas, consulting for Princess Cruises and Parq Vancouver’s fine dining Chinese restaurant, 1886. Additionally, he helped to opening the Hard Rock Fire Mountain as the property executive sous chef before returning to the east coast to take his role at Red 8
